I love vegetables and creating salads from ingredients on hand is rarely a letdown. It’s pretty difficult to fail at making salad and while raw spinach isn’t everyone’s favorite, this spinach and strawberry salad recipe is packed with both flavor and vitamins. Add feta cheese for protein, scallions for vitamin K, and garden green beans for added crunch. What really pulls these ingredients together is a drizzle of blood orange and lavender vinaigrette (recipe included below.)
- Prep Time : 10 minutes
- Gently toss spinach, sliced strawberries, feta, and diced scallions and green beans together.
- Dissolve sea salt in the lavender balsamic vinegar using a carafe or deep bowl for whisking.
- Slowly add the blood orange olive oil to the balsamic while whisking constantly. This will ensure the oil and vinegar are nicely incorporated. You'll know it's correct as the mixture begins to thicken.
- Drizzle the salad with dressing and add fresh cracked pepper to taste.
