Bring broth to a simmer in medium pot
Heat olive oil in small pan and add shallot, shitake mushrooms, red pepper, and zucchini. Cook on medium-high heat for 2-3 mins and season to taste.
Add garlic, ginger, and couscous and stir frequently for another 3 mins, allowing the couscous to integrated and become toasted slightly.
Add the mixture plus basil to the pot of hot broth. Cover and simmer on low for 8-10 mins. Voila!
